Chef Smith notes that 90% of what a chef does is buying the best possible ingredients. With a commitment to local, known, and trusted purveyors, he chooses ingredients that are sound and seasonal. "It's great to give back to Montana. We utilize local farms whenever possible." But Ryan is also quick to add that being a great chef isn't just about the ingredients and it certainly isn't about being a one-man show. It's about the people who surround you in the kitchen.

A love of the mountains brought him years ago and a simple appreciation of Yellowstone Country made him stay. His training is by passion alone.
