AIN'T NO RAMEN HERE ...

... even though it is a staple in the home-kitchen of Executive Chef Ryan Smith. Ryan showcases his artistry for cooking here at the Bar N Ranch and saves his love of chicken fried steak for the rare evening off.

Having Ryan at the Ranch has changed the dynamic of our kitchen. He is relaxed and fun, down-to-earth and passionate. His personality shows in every meal and patrons of our restaurant have fallen for him. He portrays a "live off the land" mentality that makes preparing great food seem possible for even the most aspiring chef. Every Ranch stay is marked by a guest comment about "the young chef in the kitchen": his fresh approach to classics and his inventive original creations.

Chef Smith notes that 90% of what a chef does is buying the best possible ingredients. With a commitment to local, known, and trusted purveyors, he chooses ingredients that are sound and seasonal. "It's great to give back to Montana. We utilize local farms whenever possible." But Ryan is also quick to add that being a great chef isn't just about the ingredients and it certainly isn't about being a one-man show. It's about the people who surround you in the kitchen.

When you're good at what you do, it's easy to assemble a professional following. Chef Smith has achieved this as evidenced by his support staff. "I could never do this alone. From great people comes great food." Smith and his team work seamlessly to create a delightful kitchen atmosphere and an unforgettable dining experience.

Many dinner guests leave the Ranch wondering where the Chef trained and how did we get him to move to Montana. The beautiful truth of it is, Ryan came here all on his own. A love of the mountains brought him years ago and a simple appreciation of Yellowstone Country made him stay. His training is by passion alone. What our guests enjoy while dining at his table is a meal created by a man who appreciates that food is "tasted first by the eyes and then by the mouth. If you can get ‘em to match, you're golden."
